Ingredients:
- 5 dried mushrooms
- 2 Larges carrots
- 2 Larges potato
- 1 bundle of vegetable
- 3 small shallots
- 2 teaspoon of tamarind
- 2 teaspoon of chili paste
- 3 tablespoon of chili sauce
- 2 teaspoon of raw sugar
- 1 teaspoon of salt
- 1 teaspoon of thick soy sauce (colouring)
- 250g of chicken fillet
- 1.5 litre of water
Directions:
- Soak the dried mushrooms in warm water for 20 minutes. After trimming off any tough stems, slice the mushrooms.
- Cut potatoes, carrots, chicken and shallots into small pieces.
- Heat oil in a wok. Add shallots and chili paste into wok and fry until fragrant. Add chicken, mushroom, potatoes, carrot, sugar, salt and thick soy sauce and stir over medium-high heat about 2 minutes.
- Add 1.5 litre of water, vegetables and tamarind and bring to the boil. Reduce heat to medium-low heat and simmer for 15 minutes.
